On one Shuttle flight, the first with a Mexican national on the crew, they included some Mexican food in the supplied meals. That lead to a change in some of the regular meals for subsequent Shuttle missions. It turned out that tortillas are much easier deal with in freefall and produce far fewer crumbs than bread. So a soft (tortilla-wrapped) taco is a better choice than a sandwich for lunch.
I use them as a roll-up instead of bread for PB&J’s. Chopping up a western omelette and adding guacamole & sriracha in a rollup is also tasty.
